Creamy Tomato & Lentil Soup
A comforting and creamy soup made with lentils, tomatoes, and coconut milk, perfect for a busy day. Ingredients: 1 cup dry lentils, rinsed 1 can 14 5 oz diced tomatoes 1 onion, diced 2 cloves garlic, minced 4 cups vegetable broth 1 cup coconut milk 1 tsp dried basil 1/2 tsp dried oregano Salt and pepper to taste Instructions: In a slow cooker, combine lentils, diced tomatoes, onion, garlic, vegetable broth, basil, and oregano Cook on low for 6-8 hours or high for 3-4 hours, until lentils are tender Stir in coconut milk and season with salt and pepper Blend half of the soup until smooth using an immersion blender or transfer to a blender Return blended mixture to the slow cooker and stir to combine Cook for an additional 15-30 minutes on low heat Serve hot, garnished with fresh herbs if desired
