Keto Brownie Explosion Ice Cream
Ingredients:
- 2 cups heavy cream
- 1 cup unsweetened almond milk
- 1/2 cup powdered erythritol
- 3 large egg yolks
- 2 teaspoons vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/4 cup chopped sugar-free chocolate or chocolate chips
- 1/4 cup chopped walnuts or pecans
Instructions:
In a saucepan, heat the heavy cream, almond milk, and powdered erythritol over medium heat until it starts to simmer
In a separate bowl, whisk the egg yolks
Slowly pour the heated cream mixture into the egg yolks while whisking continuously to temper the eggs
Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens slightly coats the back of a spoon
Remove from heat and stir in vanilla extract
Let it cool completely
Once cooled, stir in cocoa powder until well combined
Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions
During the last few minutes of churning, add chopped chocolate and nuts
Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours or until firm
Serve and enjoy!
