Creamy Tomato & Lentil Soup
A comforting and creamy soup made with lentils, tomatoes, and coconut milk, perfect for a busy day.
Ingredients:
- 1 cup dry lentils, rinsed
- 1 can 14
- 5 oz diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions:
In a slow cooker, combine lentils, diced tomatoes, onion, garlic, vegetable broth, basil, and oregano
Cook on low for 6-8 hours or high for 3-4 hours, until lentils are tender
Stir in coconut milk and season with salt and pepper
Blend half of the soup until smooth using an immersion blender or transfer to a blender
Return blended mixture to the slow cooker and stir to combine
Cook for an additional 15-30 minutes on low heat
Serve hot, garnished with fresh herbs if desired
