Sopa de Albondigas



Savor the warmth and goodness of Sopa de Albondigas, a traditional Mexican Meatball Soup. This hearty soup features seasoned pork meatballs, vegetables, and savory broth, creating a comforting bowl that's perfect for any occasion.

Ingredients:

  • 1 lb ground pork
  • 1/2 cup cooked rice
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 large egg
  • 8 cups chicken broth
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 zucchini, diced
  • 1/2 cup frozen peas
  • Lime wedges, for serving
  • Fresh cilantro, for garnish

Instructions:

Put cooked rice, chopped onion, minced garlic, chopped cilantro, ground cumin, dried oregano, salt, pepper, and the egg in a large bowl

Pour in the ground pork

Mix everything together well

Form the mix into little meatballs, then set them aside

Warm up the chicken broth in a big pot over medium-low heat

Carefully put each meatball into the broth one at a time as it cooks

Frozen peas, diced potatoes, and diced zucchini should all be added to the pot

Let it cook on low heat for 20 to 25 minutes, or until the meatballs are done and the vegetables are soft

If you need to, add more salt and pepper to taste

Serve Sopa de Albondigas hot, with lime wedges and fresh cilantro on the side
