Crispy Curried New Potatoes
These crispy curried new potatoes are a flavorful side dish that pairs perfectly with any main course. The combination of curry powder and garlic adds a delicious twist to the classic roasted potatoes, creating a dish that is both aromatic and satisfying.
Ingredients:
- 500g new potatoes, halved or quartered if large
- 2 tablespoons olive oil
- 1 tablespoon curry powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
Preheat oven to 200C 400F
In a large bowl, toss the halved new potatoes with olive oil, curry powder, garlic powder, salt, and pepper until evenly coated
Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper
Roast in the preheated oven for 25-30 minutes, or until potatoes are golden brown and crispy, flipping halfway through cooking for even crispiness
Once done, remove from the oven and serve hot
