Chocolate-Stuffed Churro Donuts
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup water
- 1/4 cup unsalted butter
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup chocolate chips
- Vegetable oil for frying
- 1/4 cup granulated sugar for coating
- 1 teaspoon ground cinnamon for coating
Instructions:
In a saucepan, combine water, butter, sugar, and salt
Heat over medium-high heat until the mixture boils
Remove from heat and add the vanilla extract and flour
Stir vigorously until a dough forms and pulls away from the sides of the pan
Transfer the dough to a mixing bowl and let it cool slightly
Add the eggs, one at a time, mixing well after each addition until the dough is smooth and shiny
Fold in the chocolate chips
Heat vegetable oil in a deep pot to 350F 175C
Using a piping bag or ziplock bag with a corner cut off, pipe the dough into donut shapes directly into the hot oil
Be careful not to overcrowd the pot
Fry the donuts for about 3-4 minutes on each side or until they are golden brown and cooked through
Remove the donuts from the oil and drain on paper towels
In a shallow bowl, mix together the 1/4 cup of granulated sugar and ground cinnamon for coating
While the donuts are still warm, roll them in the cinnamon-sugar mixture to coat them evenly
